Found this forum just today while looking all around for info on tuning the "Big Rig", as I call it, but better known as Old Timer, a 1989 Ford F350 with the 7.5L big block and factory EFI, I'll post my q's in the appropriate section.
I've been involved in the Dodge world of tuning and have uncovered a way to tune the ECU on the 1994-1995 Ram trucks, and am reverse engineering the CPU I/O of the early JTEC ECU as used on some 1995-1996 Ram trucks, so I am somewhat familiar with hacking, programming, etc. of vehicle ECUs, just not all that much in the Ford world.
So hope I can learn and be of some help here too :)

welcome, mopar is a tad different to ford using multiple motorola processors, ford generally only uses one intel processor up until 2000 where some of the vehicles started going to freescale/motorola ecu's for CAN provisioning
the older eec-4's are mostly intel 8061 and have limited knowledge, most of the opcodes are shared with the intel 8096 but there are still a few operands that aren't fully known, when you get into the 96+ ecu's which are almost all eec-5 / 8096 ecu's they do quite a bit of stack manipulation which takes some getting used to
theres a couple very useful disassemblers used for the intel, the most used and supported is the bill lawrence disassembler, a member here sailorbob has done quite a bit of refinement on it over the years and it works very well, its the dis806n disassembler
theres also another member here named TVRFAN that has his own SAD disassembler he put together, it works pretty well too and he frequently updates it

Hey thanks for the welcome!
The Dodge ecu I am mainly working with has one motorola cpu, however it has multiple eeproms, so its throwing me off just a tad so far :)
